Plantain Baskets

Many around the world love plantain but rarely know the many benefits it has! This superfood is rich in vitamins and minerals such as Vitamin C, Vitamin A, Vitamin B6, Magnesium and Potassium, all of which have multiple benefits for your health.

Ingredients

  • 1 large ripe or green plantain
  • Pink salt (optional)
  • Lemon squeezer
  • Envoplast paper

 

(Makes 4-5 baskets)

 

Preparation

  • Peel and cut the plantain from about 3 to 4 fingers each piece
  • Cover the lemon squeezer with envoplast paper on the inside so that the plantain piece doesn't stick
  • Smash until the plantain basket is formed with the lemon squeeze
  • Carefully remove each basket and put them in an air fryer or oven for 15 minutes at 350F or until golden
  • Add a pinch of pink salt if desired

 

You can fill them with shredded chicken, avocado, cheese, pico de gallo, seafood, meat or anything else you have in your fridge. Get cooking!
